Hope everyone is having a wonderful Memorial Day! I made these moist and delicious cream soda toffee cupcakes for today, along with barbecue baked beans (thanks for the inspiration, Greg!) and other goodies, which I’ll post at a later date.

Talk about rich! Just looking at the picture above makes me want to run to my fridge to sneak a forkful of this delectable banana cake drizzled with sweet caramel sauce.

I found this recipe on the Epicurious website and didn’t need to change any measurements or ingredients. My brother, who couldn’t get enough of the cake, said it tasted just like bananas foster, but in a different form. His comparison was spot on, particularly because of the distinct rum and banana flavor. In my opinion, you can’t go wrong when baking or cooking with alcohol!

In addition to the chocolate peppermint bark cookies I made (here) for my holiday treat bags, my mom and I made English toffee. My mom received this fabulous recipe from our neighbor’s friend a couple of years ago and we’ve used it ever since.

One thing we’ve both learned about making toffee is that in no way is it a one man job. Since the butter and sugar mixture requires constant attention with the spatula/whisk during the time it takes to thicken, someone’s arm is bound to get tired. My mom and I switched off every five minutes or so stirring the mixture. The process takes about 20 minutes.

Although a tedious and laborious task, indulging in a piece of the crunchy and decadent toffee makes the work well worth it in the end.
