I’ve come to the realization that just about anything is delicious in a tortilla. This shredded chicken in a spicy poblano cream sauce is incredibly flavorful on its own, but made even better when spread on a grilled tortilla and topped with sweet, caramelized onions. These tacos are a new favorite!

I never thought a cupcake could be so perfect until I stumbled across this recipe for churro cupakes. Yes, churro cupcakes. Say what?! These cupcakes taste exactly like the warm, chewy churros from Disneyland–but made even better with the addition of cinnamon cream cheese frosting. Please go make these asap!

Have I mentioned how much I love pumpkin? Yeah, probably. I love it even more when paired with cream cheese frosting. So, these whoopie pies are right up my alley. The cakes are fluffy and full of flavor, with a slight kick from the bourbon in the filling. Bring these pies to a fall dinner party or Thanksgiving dinner and they’re sure to be a hit.

I’m a little late, but I hope everyone’s Super Bowl Sunday was a blast (aside from the 49ers losing). My roommate and I had a bunch of friends over to watch the game, eat mass amounts of food and drink an exorbitant amount of beer. We had a variety of appetizers ranging from these stuffed jalapenos to a crock-pot sausage and cheese dip to mini weenies in Jack Daniels sauce to homemade chicken tenders to a kale cheese dip. Since a couple of my friends are vegetarians, I made half of the jalapenos with sausage, and half with just the cheese mixture–both were equally delicious!

I’m back…and extremely behind on blogging! I was in D.C. all last week for the National Christmas Tree Lighting for work; so, needless to say, I didn’t have any time to cook.
Since Christmas is fast approaching, I’m catching up on cooking/posting holiday recipes. This delicious red pepper dip more often than not makes an appearance at our holiday parties. In fact, I’m bringing the appetizer to a secret Santa party tonight. It’s tasty, simple and festive–can’t get much better than that.

I was in New York this past weekend for work, so needless to say, I’m behind on blogging. Even though the trip was quick, I was able to see a couple of friends and spend a few hours perusing the city. I absolutely love NY and didn’t want to leave, but it was nice to get home and back in the kitchen. But what does one cook when jet lagged and lazy? Well, obviously a crock-pot recipe. Or at least that’s what sounded easiest to me, and that it was!

We’re celebrating my friend Ashley’s birthday tonight, so naturally, I wanted to bake cupcakes. When I saw this recipe for Blue Moon cupcakes on Spoon Fork Bacon, I knew exactly what I was going to bake. Seriously…how could anyone pass these up? I knew I couldn’t, considering Blue Moon is my favorite beer and cupcakes are my favorite dessert. Let’s just hope Ashley feels the same way. ;)

Although I didn’t make these cupcakes for my birthday (which is today :)), I thought they’d be the perfect post for the occasion.
I brought these fluffy and moist almond-vanilla cupcakes into work the other day. We had a bunch of interviews scheduled at our office for one of our clients, so I wanted to have a sweet treat for the media (it was also our intern’s birthday). The cupcakes were an absolute hit.
One of the photographers told me that he had a brief relationship with the cupcake. Clearly he approved. :)
I still have a few in my fridge, so I’m sure I’ll indulge in one today to celebrate!

Since I’m fully embracing the Christmas season, I wanted to experiment with the holiday’s most popular and traditional flavors. My mom purchased a variety of Christmas themed cupcake liners a month ago—a small gift that wouldn’t excite many people. But I, of course, was ecstatic over her purchase. I wanted to use some of these liners before Saturday, so I decided to bake some cupcakes for my friend, Dana’s, ugly Christmas-sweater party.
I baked gingerbread cupcakes and chose to pipe them with a cream cheese frosting. Although moist and delicious, the cupcakes did not have a strong gingerbread flavor. I decided to add cinnamon and imitation maple extract to the frosting to give the cupcakes a more prominent taste. The frosting turned out absolutely delectable and paired wonderfully with the cupcakes.

Last night, I hosted a dinner party at my house with some close friends. Like my parents’ party last weekend, I had a tapas style dinner accompanied by a plethora of white and red wine. We had a fabulous variety of foods—baked brie with jam, maple syrup and brown sugar, stuffed jalepeños, cheese crostinis, caesar salad with homemade dressing and pesto sandwiches.
I made mini pesto sandwiches, sausage and cheese stuffed jalepeños, a fruit tart and a peanut butter pie.
My neighbor often makes this fruit tart when my parents have dinner parties. She always expresses how simple it is to make the tart and doesn’t understand my family’s obsession with the dessert. However, my guests last night seemed to understand the tart addiction and cleared the platter in no time. This dessert might actually be my favorite Paula Deen recipe—her knack of creating dessert recipes never ceases to amaze me.
