Zucchini noodles aka zoodles are so in right now–or so it seems. After seeing multiple recipes online using zucchini noodles, I had to get my hands on a spiralizer. I have a feeling I’ll be using the tool often. This “pasta” was incredibly flavorful and semi-guilt-free (I couldn’t help but add cheese)!

I’m extremely frugal, so in my eyes, wasting food is criminal. I always try to cook with ingredients already on hand, and this grilled cheese is a result of that. Using leftovers and items I needed to get rid of, I whipped up this cheesy and delectable grilled cheese. The caramelized onions stole the show, but the truffled fried potatoes came in a strong second. Of course, the gooey Gruyere cheese played its part, too!

Happy Thursday! I came across this recipe for Parmesan and spinach orzo on Chung-Ah’s blog over at Damn Delicious, and knew I had to make it. The creamy pasta was full of flavor and the perfect side dish. Luckily, the recipe made a lot of leftovers, so I was able to bring the orzo for lunch all week. :)

Happy New Year! After a wonderful two weeks off work, I’m finally back at the office today. I put cooking and blogging on the back burner over the break, but I’m back in action now and bring you potato croquettes. These crispy taters are a must-make. I brought the croquettes to a football party over the weekend and they were gobbled up in no time. I think my brother alone ate five of them!

Whoa, two posts in one week? Can’t remember the last time I did that. This week was a little less crazy with work and whatnot, so I took advantage and got to cooking.
After seeing a photo of these veggie burgers online the other day, I had to make them. I’m so glad that I did because they were absolutely delicious, and I will definitely be making them again soon.

Not having work on Monday really threw me off this week–I can’t believe it’s already Wednesday. I did, however, enjoy the long weekend and spent part of it at home with my grandma. We had a wonderful time together hanging out, shopping and eating (this quinoa salad included)…oh, and dealing with my flat tire for most of Saturday afternoon. I got to experience my first ride in a tow truck, though. Woohoo!

I’m a little late, but I hope everyone’s Super Bowl Sunday was a blast (aside from the 49ers losing). My roommate and I had a bunch of friends over to watch the game, eat mass amounts of food and drink an exorbitant amount of beer. We had a variety of appetizers ranging from these stuffed jalapenos to a crock-pot sausage and cheese dip to mini weenies in Jack Daniels sauce to homemade chicken tenders to a kale cheese dip. Since a couple of my friends are vegetarians, I made half of the jalapenos with sausage, and half with just the cheese mixture–both were equally delicious!

No joke, my roommate and I have eaten this salad four days in a row–it’s that good. It’s also one of the easiest and quickest recipes, aside from the time it takes to cook the quinoa, which is all of 10-15 minutes. The lemon-mustard vinaigrette compliments the salad wonderfully, and tames the bitterness of the kale. Considering how much salad we made, I’ll be eating this for another few days.

I’m back…and extremely behind on blogging! I was in D.C. all last week for the National Christmas Tree Lighting for work; so, needless to say, I didn’t have any time to cook.
Since Christmas is fast approaching, I’m catching up on cooking/posting holiday recipes. This delicious red pepper dip more often than not makes an appearance at our holiday parties. In fact, I’m bringing the appetizer to a secret Santa party tonight. It’s tasty, simple and festive–can’t get much better than that.
