I’ve always been a huge fan of Bobby Flay, but after finding this recipe, I’m his number one fan. These tacos are some of the best I’ve ever tasted; they have an incredible complexity of flavors and textures, from the flaky, cinnamon-chile rubbed halibut to the crisp citrus slaw. I’m getting giddy just thinking about eating the leftovers for lunch today!

I’ve come to the realization that just about anything is delicious in a tortilla. This shredded chicken in a spicy poblano cream sauce is incredibly flavorful on its own, but made even better when spread on a grilled tortilla and topped with sweet, caramelized onions. These tacos are a new favorite!

Since late last year, buffalo sauce and I have become very close. I find myself wanting to put Frank’s hot sauce on anything and everything. I was craving a buffalo dish the other day and stumbled across this taco recipe. With a few alterations, the tacos turned out unbelievably delicious. The hot sauce provided the perfect amount of spice, and the onion and cilantro relish provided a nice crunch. Thank God the recipe made leftovers so I can eat this the rest of the week!

As I expected, last month flew by. I visited my hometown of Columbus, Ohio two different weekends, once for my cousin’s wedding then again for the first Ohio State football game (GO BUCKS!). Life has momentarily slowed down, so I was finally able to get back in the kitchen. These tostadas were delicious and simple to prepare. The freshly fried corn tortillas are a must!

This burrito is the epitome of a fresh, summer meal (unlike my last post). The sweetness of the chicken and corn compliments the slightly spicy tomatillo sauce. Though the recipe was somewhat laborious, it was completely worth it. All of the components were delicious on their own, and even better when combined.

Happy Taco Tuesday! This is a bold statement, but I have to admit that these are some of the best carne asada tacos I’ve ever tasted. The marinade for the meat was divine–I would have been content eating the carne asada alone. I recommend going light on the smoky dried-chili salsa, as it’s pretty dang spicy. But since I have a cold right now, I didn’t mind so much, as it cleared up my sinuses!

Happy Wednesday, everyone! I wish I had exciting news to share, but there’s not much happening over here–just working away and spending lots of time in the kitchen.
This crock-pot shredded chicken is unbelievably simple and you’ll most likely have most, if not all, ingredients on hand. The chicken would be delicious plain, but there’s nothing like a fresh, crunchy homemade taco shell. Am I right?

Happy Friday! I hope everyone had a great week. Mine had an unexpected, but wonderful start–my roommate and I decided to foster a kitten! He’s been battling a virus for a few weeks and wasn’t able to fight it at the shelter. We’re hoping that he’ll get better soon now that he’s in a home and away from other cats. Though we’ve only had the little guy one week, I have a feeling I’m going to want to keep him. :)
On to the tacos–I know, quinoa again, right? I’d already made the ground turkey and quinoa, and had a large bag of kale, so I decided to combine the ingredients and make tacos. And believe it or not, it worked!

Happy hump day! Hope everyone is having a wonderful week so far. Per usual, it’s been pretty hectic over here, but I’ve got to say, these tequila-lime mahi mahi tacos made everything much better.
Though the marinade didn’t flavor the fish as much as I’d hoped, the honey-lime sour cream and vinegar-soaked cabbage brought the tacos to life. Serve alongside an ice cold beer and you’ve got yourself the perfect summer meal.
