I can’t believe I haven’t made anything with peaches yet! I wanted to make a roasted peach dessert, but decided to make this salsa instead. I’m sure that doesn’t come as much of a surprise, considering I’m on a Mexican food-making kick lately. I’m glad I changed my mind, though, as the salsa was incredible! I loved the sweetness of the peaches paired with the spiciness of the Serrano peppers. Serve the salsa with tortilla chips or on top of grilled chicken breasts.

I’ve never used ‘potato salad’ and ‘light’ in the same sentence, until this recipe. The vinaigrette-soaked potatoes burst with flavor and the crispy bacon and grated egg compliment the salad wonderfully. I still love mayonnaise-based potato salads, but this recipe is a delicious and healthier alternative!

I love summertime, primarily because it’s grilling season. I’ve always been a fan of grilled food with that delicious char flavor. This spicy corn salad has the grilled taste and bursts with flavor, from the spice of the hot sauce to the sweetness of the sugar and honey. The dish pairs wonderfully with grilled chicken, and even better with this honey-lime chicken burrito!

CHEESE! I don’t think I could live without it. I’ve considered cutting out dairy products, but the thought of life without cheese makes me cringe. This queso dip was the epitome of cheesy deliciousness with just the right amount of spice from the serrano. The dip would be perfect for your Fourth of July party tomorrow!

I wasn’t sure what to make for dinner the other night, but knew I wanted something with buffalo chicken. I spotted the zucchini at the grocery store and was inspired to make these zucchini boats, which were everything I dreamed of and more. My brother suggested using potato skins instead of zucchini next time (which I’m all about), so keep your eyes peeled for that post! :)

I know I’m late, but I hope everyone had a relaxing Memorial Day weekend! My brother and his girlfriend flew in from Atlanta, so I spent the weekend at my parents’ house with my entire family. It was so nice to have everyone home–we had a wonderful time eating, drinking and laying out by the pool.
We hosted a dinner party over the weekend and my boyfriend and I were in charge of pickling the onions and cauliflower for the salad (will post salad recipe soon). The pickled onions and cauliflower turned out delicious–and the pickling process was so easy!

I’ve always been obsessed with chicken tenders–served with lots of ranch, of course. Growing up, my brothers and I ordered chicken fingers every time our family went out to dinner…every time. But one night at dinner, my mom forced us to order something else on the menu. We had no idea what to get!
A few years ago, my mom fed my obsession and sent me a three-ingredient recipe for homemade chicken strips. Since then, these chicken tenders have been my go-to recipe for game day appetizers or dinner parties; that was until I found this recipe for quinoa crusted chicken strips. Although more labor intensive than the other recipe, these chicken strips were incredibly flavorful and delicious, especially when paired with the slightly sweet BBQ honey mustard.

Yes, you read that correctly–bacon-wrapped buffalo chicken jalapeño poppers. Crazy, right?! I stumbled across this recipe a few months ago, but completely forgot about it until now. These poppers were unbelievably flavorful, with just the right amount of kick from the buffalo sauce and jalapeño. If you’re like me and love bacon, buffalo sauce and jalapeños, please go make these!

Happy Thursday! I came across this recipe for Parmesan and spinach orzo on Chung-Ah’s blog over at Damn Delicious, and knew I had to make it. The creamy pasta was full of flavor and the perfect side dish. Luckily, the recipe made a lot of leftovers, so I was able to bring the orzo for lunch all week. :)
