IMG_6698I couldn’t help but notice the pimento cheese recipes floating around the Internet, so I wanted to try it myself. Of course, being a burger lover, I decided to use the cheese on a juicy burger. The pimento cheese is delicious plain, as a dip with chips, but the melted, gooey cheese was divine on a burger!

IMG_6235I’m extremely frugal, so in my eyes, wasting food is criminal. I always try to cook with ingredients already on hand, and this grilled cheese is a result of that. Using leftovers and items I needed to get rid of, I whipped up this cheesy and delectable grilled cheese. The caramelized onions stole the show, but the truffled fried potatoes came in a strong second. Of course, the gooey Gruyere cheese played its part, too!

With summer right around the corner, I couldn’t think of a better way to welcome the season than some delicious BBQ food. These pulled BBQ chicken sliders are a twist on the pulled pork sandwich–the chicken is just as flavorful and takes half the amount of time to cook! Pair the sliders with some homemade potato salad (recipe coming soon), and your taste buds will thank you. :)

Hope everyone had a relaxing Memorial Day! I drove home to spend the day with my parents, as it was also my mom’s birthday. We spent the day relaxing by the pool and cooking some delicious food.

We hadn’t used our smoker in a while, so we decided to smoke a pork loin and make these sandwiches. Though time-consuming (since we made the coleslaw and BBQ sauce from scratch), the sandwiches were spectacular. The smokey meat paired wonderfully with the vinegar based BBQ sauce. My mouth is watering just thinking about them!

Whoa, two posts in one week? Can’t remember the last time I did that. This week was a little less crazy with work and whatnot, so I took advantage and got to cooking.

After seeing a photo of these veggie burgers online the other day, I had to make them. I’m so glad that I did because they were absolutely delicious, and I will definitely be making them again soon.

Hope everyone is having a great Saturday. Whether or not you’re a vegetarian, this “burger” is definitely worth making. It’s flavorful and complex–the bite of the Dijon mayonnaise compliments the earthy tasting patty, while the slightly crispy bun perfectly contrasts the creamy goat cheese and tender patty. It’s a healthy alternative to a hamburger with fewer calories. :)

Put your bikini/swim trunks away for the day and go make this sandwich. I promise you won’t regret it. Though this isn’t a healthy summer recipe, the sandwich is so delicious that it doesn’t matter. And as I’m sure you can see from the photo, the gooey cheese takes the cake.

One of the best parts about this sandwich is that it’s made up of leftovers. Sure, not everyone has leftover beef tenderloin and homemade pesto sitting in the fridge, but if you do (or want to make everything fresh), I highly suggest you do so. :)

My trip to New York went by way too quickly, as vacations typically do, but I had a wonderful time with my mom, my best friend and her mom. We spent the week shopping until we dropped, exploring the streets and most importantly, eating our way through the city.

Below are some photos of the best food I ate on the trip. We chose some of the restaurants/dishes primarily because Food Network featured them on The Best Thing I Ever Ate–the homemade barbecue chips with blue cheese and bacon dip from Blue Smoke, and the french onion soup dumplings from The Stanton Social (I’m still dreaming about these).

Unfortunately, I didn’t get to check off all the restaurants on my list, but I’ll save them for my next visit. Thank you so much, Kay from Pure Complex, for sending me your suggestions!

I often prefer food and dessert in mini form. Not only is it easier to eat, but it also doesn’t make me feel as guilty about eating an entire hamburger or cupcake. :)

While home for Father’s Day, my mom and I racked our brains for new recipe ideas. We worked with ingredients already in the fridge/pantry, minus a few we had to buy at the store, and came up with these delectable grilled chicken sliders.

The bite of the aioli worked brilliantly with the saltiness of the bacon and slightly charred tomatoes . The sandwich was also great for its complexity of textures.

I’d say these sandwiches were a home run. :)
