I spent last weekend at home with my mom, grandma and boyfriend–we relaxed, watched movies, and ate gobs of food. While at home, my mom and I made this delicious, spicy soba noodle salad. The recipe made enough for a week of leftovers, but I wasn’t complaining about that!

I apologize to anyone who doesn’t love Mexican food as much as I do, because I can’t stop cooking it lately! When I’m at the grocery store, I always find myself buying cilantro, jalapeños, tortillas, etc., and naturally, my mind goes to Mexican food.
Anyways, these enchiladas were delicious! I typically prefer a tomatillo sauce, but this red sauce was fantastic and I know I’ll be making it again soon.

I’ve come to the realization that just about anything is delicious in a tortilla. This shredded chicken in a spicy poblano cream sauce is incredibly flavorful on its own, but made even better when spread on a grilled tortilla and topped with sweet, caramelized onions. These tacos are a new favorite!

This past weekend revolved around food–particularly yesterday. On top of making these delicious and unique tostadas, I made spicy queso dip (with my new cast iron skillet!), and jalapeño margaritas. I’ll post both recipes soon. Back to the tostadas, though. The tostadas were beyond flavorful and spicy! I have a relatively low spice tolerance, so I added extra sour cream to calm the burn. :)

I wasn’t sure what to make for dinner the other night, but knew I wanted something with buffalo chicken. I spotted the zucchini at the grocery store and was inspired to make these zucchini boats, which were everything I dreamed of and more. My brother suggested using potato skins instead of zucchini next time (which I’m all about), so keep your eyes peeled for that post! :)

This pasta dish is a new favorite. Jalapeno, lime and cilantro…you can’t go wrong! The flavor was incredible, and similar to that of CPK’s chicken tequila fettuccine–but better, of course, considering it’s homemade!

With summer right around the corner, I couldn’t think of a better way to welcome the season than some delicious BBQ food. These pulled BBQ chicken sliders are a twist on the pulled pork sandwich–the chicken is just as flavorful and takes half the amount of time to cook! Pair the sliders with some homemade potato salad (recipe coming soon), and your taste buds will thank you. :)

I’ve always been obsessed with chicken tenders–served with lots of ranch, of course. Growing up, my brothers and I ordered chicken fingers every time our family went out to dinner…every time. But one night at dinner, my mom forced us to order something else on the menu. We had no idea what to get!
A few years ago, my mom fed my obsession and sent me a three-ingredient recipe for homemade chicken strips. Since then, these chicken tenders have been my go-to recipe for game day appetizers or dinner parties; that was until I found this recipe for quinoa crusted chicken strips. Although more labor intensive than the other recipe, these chicken strips were incredibly flavorful and delicious, especially when paired with the slightly sweet BBQ honey mustard.

It’s been a long two weeks. I’m still recovering from a serious gum surgery, but am finally starting to feel human again. My diet for the past two weeks has consisted of frozen yogurt, protein shakes and Ramen…and all I want is a cheeseburger!!
I couldn’t bear to eat another bowl of Maruchan Ramen, so I decided to try eating mac & cheese. Granted, I was only able to eat the noodles and cheese sauce, but the rest of my family enjoyed the pasta with the mushrooms, peas and chicken. Everyone gave the dish two thumbs up!

As much as I tried to avoid it, I caught the dreaded cold going around. Sleep, DayQuil and NyQuil have been my best friends this week. I wanted to make something hearty and healthy, so I came up with this turkey chili loaded with vegetables. The chili is of course healthier sans sour cream, but I’m a sucker for sour cream, so I figured a dollop wouldn’t hurt. :)
