I’ve never used ‘potato salad’ and ‘light’ in the same sentence, until this recipe. The vinaigrette-soaked potatoes burst with flavor and the crispy bacon and grated egg compliment the salad wonderfully. I still love mayonnaise-based potato salads, but this recipe is a delicious and healthier alternative!

I couldn’t help but notice the pimento cheese recipes floating around the Internet, so I wanted to try it myself. Of course, being a burger lover, I decided to use the cheese on a juicy burger. The pimento cheese is delicious plain, as a dip with chips, but the melted, gooey cheese was divine on a burger!

I wasn’t sure what to make for dinner the other night, but knew I wanted something with buffalo chicken. I spotted the zucchini at the grocery store and was inspired to make these zucchini boats, which were everything I dreamed of and more. My brother suggested using potato skins instead of zucchini next time (which I’m all about), so keep your eyes peeled for that post! :)

Yes, you read that correctly–bacon-wrapped buffalo chicken jalapeño poppers. Crazy, right?! I stumbled across this recipe a few months ago, but completely forgot about it until now. These poppers were unbelievably flavorful, with just the right amount of kick from the buffalo sauce and jalapeño. If you’re like me and love bacon, buffalo sauce and jalapeños, please go make these!

How is it already August?! The next couple months are going to fly by for me, as I’ll be in Ohio two different weekends, then my brother gets married in September. Though it’s been extremely busy, it has been and will be a blast spending time with family and friends. I’ll only be in LA two weekends out of the upcoming seven, so I might be a little slow to post!
On to the recipe–this dish is simple and delicious, with the star being the creole mustard sauce. The meat and vegetables can be served on or off the kabobs. Unfortunately, I wasn’t able to snap a photo until after we ate, so the veggies aren’t pictured. Food blogger fail!

Hope everyone had a relaxing Memorial Day! I drove home to spend the day with my parents, as it was also my mom’s birthday. We spent the day relaxing by the pool and cooking some delicious food.
We hadn’t used our smoker in a while, so we decided to smoke a pork loin and make these sandwiches. Though time-consuming (since we made the coleslaw and BBQ sauce from scratch), the sandwiches were spectacular. The smokey meat paired wonderfully with the vinegar based BBQ sauce. My mouth is watering just thinking about them!

I’m a little late, but I hope everyone’s Super Bowl Sunday was a blast (aside from the 49ers losing). My roommate and I had a bunch of friends over to watch the game, eat mass amounts of food and drink an exorbitant amount of beer. We had a variety of appetizers ranging from these stuffed jalapenos to a crock-pot sausage and cheese dip to mini weenies in Jack Daniels sauce to homemade chicken tenders to a kale cheese dip. Since a couple of my friends are vegetarians, I made half of the jalapenos with sausage, and half with just the cheese mixture–both were equally delicious!

Even though we had a long weekend, this week is going by miserably slow. At least work is busy, so that helps!
I remember Giada making these stuffed peppers in an episode of Giada at Home a while back, and I’ve had the recipe bookmarked ever since. I altered the recipe a bit, using goat cheese instead of ricotta, excluding the peas, etc., and boy were they delicious–especially straight out of the oven. My roommate doesn’t eat pork, so I excluded the pancetta from her peppers. Judging from her reaction, the peppers were equally as delicious without the meat. :)
