I spent last weekend at home with my mom, grandma and boyfriend–we relaxed, watched movies, and ate gobs of food. While at home, my mom and I made this delicious, spicy soba noodle salad. The recipe made enough for a week of leftovers, but I wasn’t complaining about that!

Zucchini noodles aka zoodles are so in right now–or so it seems. After seeing multiple recipes online using zucchini noodles, I had to get my hands on a spiralizer. I have a feeling I’ll be using the tool often. This “pasta” was incredibly flavorful and semi-guilt-free (I couldn’t help but add cheese)!

This pasta dish is a new favorite. Jalapeno, lime and cilantro…you can’t go wrong! The flavor was incredible, and similar to that of CPK’s chicken tequila fettuccine–but better, of course, considering it’s homemade!

It’s been a long two weeks. I’m still recovering from a serious gum surgery, but am finally starting to feel human again. My diet for the past two weeks has consisted of frozen yogurt, protein shakes and Ramen…and all I want is a cheeseburger!!
I couldn’t bear to eat another bowl of Maruchan Ramen, so I decided to try eating mac & cheese. Granted, I was only able to eat the noodles and cheese sauce, but the rest of my family enjoyed the pasta with the mushrooms, peas and chicken. Everyone gave the dish two thumbs up!

Happy Thursday! I came across this recipe for Parmesan and spinach orzo on Chung-Ah’s blog over at Damn Delicious, and knew I had to make it. The creamy pasta was full of flavor and the perfect side dish. Luckily, the recipe made a lot of leftovers, so I was able to bring the orzo for lunch all week. :)

Life has been insanely busy since the start of the year, meaning I’ve been a complete stress case. On top of working full-time and taking an extension course at UCLA, I’m moving into a new apartment in two weeks! Although stressed, I’m beyond excited for everything to come–it just means I’ll be a little behind on blogging, so I apologize in advance!

Work has been pretty busy the past couple weeks, so I haven’t spent much time in the kitchen. I also haven’t had a chance to go to the grocery store, so I had to make do with what I had on hand! This spaghetti was quick and delicious, and made plenty of leftovers for the week.

For some reason, I’d never made zucchini boats until now. Not sure why, considering they were unbelievably easy to make…and delicious! After perusing the Internet for recipe ideas, I decided to just make up my own, with ingredients already on hand. The zucchini boats were fantastic served alone, but would also be wonderful alongside grilled chicken breast.
On a side note, I’m bummed that my Buckeyes didn’t make it to the Final Four, but they had a great season. I actually got to see them play in the Sweet Sixteen and Elite Eight at Staples Center, which was pretty unreal. Go Bucks!

I’ve pretty much given up on the possibility of chilly weather this holiday season. But that doesn’t mean I’m not embracing hearty and comforting fall recipes. This classic lasagna is absolutely delicious and relatively easy to make. Oh, and the recipe makes enough to feed a family of 12…or more. So just know that you’ll have a lot of leftovers if making the lasagna for yourself (like I did).
I hope everyone has a wonderful Thanksgiving full of good food, family and friends.
