As much as I tried to avoid it, I caught the dreaded cold going around. Sleep, DayQuil and NyQuil have been my best friends this week. I wanted to make something hearty and healthy, so I came up with this turkey chili loaded with vegetables. The chili is of course healthier sans sour cream, but I’m a sucker for sour cream, so I figured a dollop wouldn’t hurt. :)

IMG_4275As I expected, last month flew by. I visited my hometown of Columbus, Ohio two different weekends, once for my cousin’s wedding then again for the first Ohio State football game (GO BUCKS!). Life has momentarily slowed down, so I was finally able to get back in the kitchen. These tostadas were delicious and simple to prepare. The freshly fried corn tortillas are a must!

IMG_3943This burrito is the epitome of a fresh, summer meal (unlike my last post). The sweetness of the chicken and corn compliments the slightly spicy tomatillo sauce. Though the recipe was somewhat laborious, it was completely worth it. All of the components were delicious on their own, and even better when combined.

Happy Wednesday, everyone! I wish I had exciting news to share, but there’s not much happening over here–just working away and spending lots of time in the kitchen.

This crock-pot shredded chicken is unbelievably simple and you’ll most likely have most, if not all, ingredients on hand. The chicken would be delicious plain, but there’s nothing like a fresh, crunchy homemade taco shell. Am I right?

Whoa, two posts in one week? Can’t remember the last time I did that. This week was a little less crazy with work and whatnot, so I took advantage and got to cooking.

After seeing a photo of these veggie burgers online the other day, I had to make them. I’m so glad that I did because they were absolutely delicious, and I will definitely be making them again soon.

I was in Miami for work most of last week/weekend, so I wasn’t able to post until now. Although the trip was extremely busy, we were able to relax a bit on Friday night and watch both of our clients perform at Ultra Music Festival–it was pretty incredible!

My roommate, Megan, and I decided that we’d be content eating this quinoa salad for every meal, for the rest of our lives. Okay, maybe that’s a bit of an exaggeration, but it’s that delicious. Super easy to make, too!

Not having work on Monday really threw me off this week–I can’t believe it’s already Wednesday. I did, however, enjoy the long weekend and spent part of it at home with my grandma. We had a wonderful time together hanging out, shopping and eating (this quinoa salad included)…oh, and dealing with my flat tire for most of Saturday afternoon. I got to experience my first ride in a tow truck, though. Woohoo!

I’m sure anyone living in Southern California is saying, “Chili? In 90 degree weather? Are you crazy?” Maybe. But it is fall, after all, and I’ve been itching to cook with pumpkin. I also purchased ground turkey, so it seemed fitting that I combine the two to make chili. Though the pumpkin is almost entirely masked by the other ingredients, it still adds a subtle sweet and earthy flavor.

I know I’m late, but happy 4th of July! It’s been a busy work week, but I was still able to spend a good amount of time with my family and relatives in town from Ohio–primarily because my boss was generous enough to give us the day off yesterday.

While home, we ate some unbelievably delicious food (my uncle is an incredible cook, or rather, chef), drank copious amounts of wine and laid in the sun for far too long.

Back to work today, but at least it’s Friday! Hope everyone has a great weekend.

As I’ve said multiple times, I love the versatility of beans. They can be eaten plain, in a tortilla, in a dip, in a casserole…the list goes on. This recipe for Cuban black beans and rice made for a hearty and healthy meal served alongside grilled chicken. Check out another bean recipe I made here.

I spent this past weekend in Palm Springs with a group of friends, so I figured I’d share a few photos. With a temperature of 100-plus degrees, we didn’t get out of the pool very often. :)
