Though we haven’t been experiencing “chili” weather here in LA (more like ice cream weather), it hasn’t stopped me from embracing winter meals. This white bean and chicken chili is not only hearty, but it’s also relatively healthy and much lighter than the original chili recipe. But of course, if you’re feeling adventurous, topping the dish with cheese, sour cream, etc. is always welcome.

Recipe:
1 lb. dried cannellini beans
2 tbsp. olive oil
1 tbsp. minced garlic
3/4 cup diced onion
3/4 cup diced carrots
3/4 cup diced celery
1 lb. skinless, boneless chicken breasts, finely chopped
1 tbsp. ground cumin
1/2 tbsp. chili powder
1 tbsp. dried oregano
Salt and pepper, to taste
1/2 tsp. cayenne
1 1/2 cups chopped green chiles (fresh or canned)
4 cups homemade chicken broth
Directions:
In a saucepan, heat the olive oil over medium heat. Add the onion, carrots and celery; cook for 2 to 3 minutes, until slightly softened. Remove mixture from pan. In the same pan, cook the chicken with the cumin, chili powder, oregano, salt, pepper and cayenne. Cook, stirring, until the chicken is slightly browned, 3 to 4 minutes. Add garlic. Return onion mixture to pan.
Add the chiles and chicken broth and bring to a boil, stirring occasionally. Reduce the heat to medium-low; cook, stirring occasionally, for approximately 20-45 minutes, until reach desired thickened. Stir in the beans and cook for another 10 minutes.

Fanciest chili ever. It’s not too chilly here either, so this looks just fantastic.
I can eat chili any time of the year. This would be perfect with a nice glass of vino!

Cannellini beans are an under used ingredient in the glutton house and this sounds like a perfect recipe to reverse that trend.

I especially like that you used chopped rather than ground chicken–gives a very mild meat a little more presence in the dish–but this does sound all through like a very lovely ‘white chili’. Yum!

ThIs dish has all my favourite spices in it, and given I do live in a chillier climate, is event more perfect.
Can it be chilli for when it is chilly too? :D I’m pretty cold right now and just spent 2 weeks in minus temperatures – needing things like this right now to bring my core temperature back to “normal operation” again :D Looks delish Caroline :)

I can’t even imagine ice cream weather in January… mind you, I won’t complain too much we are hovering around 0 right now compared to -27 C (-16 F) earlier this week! I love white beans in chili – I think they’re my favourite; perfect texture. The combination of cayenne and green chiles must lend some nice fire too… yummy Canadian weather food! :)

This dish seems to have made it’s way on the menus of some mainstream franchise restaurants lately, but, I’m certain none of them were made from the fresh ingredients as yours…The ones I’ve seen featuring it should have hired you to photograph their dish for the menu, or better yet… Photo YOUR dish for Their menu!!! That wouldn’t be anymore misleading than their claims to be cooking from fresh…Yours looks so much more appetizing, and beautiful… Even without the sour cream drizzle attempts I’ve seen pictures of.
