After the first time I made my lemon bars, I knew they would be my go-to dessert for any party or get-together. I almost feel guilty when I get multiple compliments on the bars, since they are so easy to make.
There’s no doubt that my friend has been their biggest fan from the beginning. She will often ask me if I can bake them for her just because they sound good at the time—I’ve gotten pleads via text and phone call…and definitely in person. She made a request the other day, but suggested that I make lime bars instead of lemon. I figured that lime would be just as tasty, so I gave it a shot.
When I tried the lime filling, I almost couldn’t tell that it wasn’t lemon, but still decided to bake the bars. After 40 minutes of curious anticipation, I took the bars out of the oven to let them cool. Although the bars didn’t have as strong of a lime taste as I had hoped, they were still delicious and had the citrus flavor. Next time, I would add more lime juice and add lime zest to give them that tart pop.
Apparently the dessert bars were still a hit, though, since the batches I gave to my friend and left for my brother last night are almost gone!
Crust recipe:
1 cup flour
1/2 cup (1 stick) unsalted butter
1/4 cup confectioner’s sugar
Lime filling recipe:
2 eggs
1 cup sugar
4-5 tbsp. lime juice
2 tbsp. flour
2 tbsp. lime zest, from 2 limes
Directions:
Preheat oven to 350 degrees.
Cream flour, butter and confectioner’s sugar and pat into 8×8″ baking pan. Press firmly. Bake for 15-20 minutes, until top of crust is slightly golden.
Beat eggs, add sugar, lime juice, 2 tbs. flour and lime zest. Pour over crust (when finished baking) and bake for another 15-20 minutes. Dust with confectioner’s sugar after baking. Cool and cut into bars.
I’ve never heard of these, but they look great!
I adore lemon bars..my go to recipe is from cooking light but I will definetly try yours out soon and I still have to try Greg’s recipe too
You have to try Greg’s lemon bars. They are soooooo good and addictive. I’m telling you – these things are dangerous. ;)
Cooking Light has some pretty awesome recipes, if my brother will let me (he’s obsessed with these), I’ll have to try that recipe out!
I’ve never made lim bars before…I might have a new obsession! Have you tried mixing the lemon and the lime?
Well, I’m going to have to try Greg’s lemon bars, since you both mentioned them (coming from two of my favorite foodies)! I’ve never tried mixing lemon and lime, but will have to try that sometime! I didn’t really notice a difference with the lime, so I’d definitely add more zest next time to see if that changes anything.
Mmmm…I love lemon bars! I have never tried lime bars before….but they sound incredible! :D
